Potassium Sorbate

I'm attempting to make vinegar from various local fruit wines, but I've found that while those that use potassium metabisulfite are easy enough to correct with peroxide, many sweet wines seem to be using potassium sorbate "wine conditioner" to prevent yeast reproduction. Will this affect Acetobacter reproduction/vinegar production?

Sorry, don't know. Should not harm the vinegar bacteria, but I'm not sure. To proof it by yourself, just infuse a small piece of mother-of-vinegar in a sample of wine. Dilute the wine first 1:1 with water, about 100 ml total volume are sufficient. If you observe a new thin layer mother-of-vinegar on the surface after about one or two weeks (do NOT shake the jar / glass!!!), you can use the wine to ferment it into vinegar.
